  • It depends. If they are good quality produce picked fairly ripe and consumed without delay, fresh is obviously best. If it's last year's crop, then I'd go with canned.

  • I remember an article once when canned items started being a thing, doctors were reporting people with way too much sodium was in the people, and canned foods was the cause for it. Salt was always a preservative, where indians treated dear meat with it and a whole array of things.

  • Fresh is better, but what you buy in the store may be suspect. Especially if its not packaged so others can handle it. Canned will last longer but if you have issues with sodium you have to check that. I try to only buy no salt added, and sometimes have to get frozen for that reason. Also fresh will last longer if you spray it with diluted vinegar.

Yes, thanks for your comment well appreciated :)
  • Certainly, as long as you wash properly. Canned fruits and vegetables are COOKED, and the cooking process inevitably causes them to lose some of their "goodness" - not only flavor, but also healthwise (vitamins and minerals). . . . . Frozen fruits and vegetables, on the other hand, are nearly as good as fresh - both in taste and in healthfulness - though there are some exceptions. For example: I've never had frozen green beans that tasted right. The canned always taste better (and in particular: the French Cut taste best).
